The world of pasta is bountiful and there’s truly something for every occasion, whether it’s a decorative farfalle or an understated rigatoni.
But there’s a new shape in town and it’s set to mix up your mealtimes.
Enter, the cascatelli – which translates as ‘waterfalls’ in Italian.
With over 300 distinct pasta shapes to choose from, this latest addition is intriguing to the eye and looks rather reminiscent of an octopus tentacle.
But it seems the bizarre ruffled comma-shape is actually a master of engineering.
Created by The Sporkful podcast host Dan Pashman, the cascatelli is designed to improve three vital areas of pasta consumption – ‘forkability’ (how easy it is to get and keep the pasta on a fork), ‘sauceability’ (how well it holds a sauce) and ‘toothsinkability’ (how satisfying it is to eat).
To maximise all three, the new shape boasts both a flat strip as well as ruffles that stick out at a 90-degree angle – in order to hold sauce, but also add an interesting texture.

‘Spaghetti is just a tube. After a few bites, it’s the same,’ creator Dan Pashman told NPR.
‘That right-angle element is really key to what I think makes this shape different.
‘There are very few pasta shapes that have right angles. It provides resistance to the bite at all angles. It creates kind of like an L-beam, and that makes for a very satisfying bite.’
According to Dan, cascatelli is inspired by some of his favourite existing shapes (such as bucatini and mafalde) and the entire project took nearly three years to complete.
He added: ‘If you were to ask me which has kept me up more in the past three years — my actual children or this pasta shape — it’d be a tough call.’
The new pasta from Sporkful has already sold out online in the US – here’s hoping it lands in the UK very soon, too.
